- 1/2 cup fresh cream

- 1/2 tsp red chilli powder

- 1 medium onion,
- 1 medium tomato
- 1 tsp ginger + 1 tsp garlic (finely chopped)
- 3-4 green chilli
Instructions to make to make Matar Aloo Palak
- Marinade potatoes with salt + turmeric for 10 - 15 minutes.
- Assemble all other ingredients, make paste of onion + ginger + green chilli. Make smooth paste of tomato. Blanch spinach and make a smooth paste.
- In pan add oil and fry the marinated potatoes till golden brown and keep aside.
- In pan add 2-3 tbsp oil, add cumin seeds and let it crackle, then add garlic and sauté for few seconds till turns light golden brown. Add onion + ginger + chilli paste and stir fry by adding little water for 3-4 minutes till rawness goes off and turns aromatic.

- Now add tomato paste + all spices (except garam masala) and stir fry till water evaporates to some extent.
- Now add spinach paste, mix well and cook for 4-5 minutes by adding green peas + salt.
- Now add fried potatoes + sugar, mix well.
- Now add milk + garam masala + kasuri Methi, mix well and cook for 2-3 minutes.
- Lastly add fresh cream, mix well and simmer for 2-3 minutes. Curry is ready.
- Matar Aloo Palak is ready to serve.
